Broccoli Cheddar Rice Skillet
In a skillet on medium high heat add 1 T. of oil and cook the chicken pieces for 3-5 minutes on each side (it won’t be done but will cook again in skillet) Remove. Add 1 T. of oil to the skillet and sauté onions for 1-2 minutes. Add the rice and cook for another minute. Stir in the broth mixture, bring to a boil. Cover and reduce heat to low. Cook for 12 minutes. Nestle the chicken back into the rice mixture and place broccoli on top. Cover and cook for another 10 minutes. Make sure it is on low to not burn the bottom. When the rice and chicken are done, top with cheese and serve.
