Caramelized Pork Tacos with Pineapple Salsa
Add 1-2 T. of oil to a large skillet on medium high heat. Add the small white onion bag and the amount of jalapenos you would like. Sauté for 1-2 min. Add the pork and cook for 2-3 min. until no longer pink. IMPORTANT- turn the heat to HIGH. Sprinkle 2 T. of sugar over pork and add 2 T. of water and stir once. Let sit for at least one minute. Stir once again and let sit again for 1 min Repeat until the pork is brown and caramelized. (If the heat is not high it will not brown and caramelize.) Salsa: peel and small dice the cucumber. In a bowl add the cucumber, pineapple salsa. Stir. Add a touch of garlic salt if needed to taste. Heat tortillas. Wedge lime. Add pork, top with salsa and drizzle with sriracha mayo, drizzle with lime juice.
