Chili Lime Pork with Corn Salad
Husk and boil the corn for 10 minutes. Cut corn off cob. Dice avocado. Toss corn, cilantro, avocado, and as much jalapenos as you would like in a bowl. Drizzle half the lime juice and salt. Heat a grill or skillet to medium high heat. Add a little oil and cook the pork for 3-5 min. on each side until done. Serve pork with corn salad and drizzle the rest of the lime juice over the pork and salad.
