Creamy Chicken Gnocchi Soup
In a large pot add 1-2 T. of oil and cook chicken for 3-4 minutes per side. Remove, dice. In the same pot add 1 T. of oil and sauté the onions, celery, carrots for 3-4 minutes. Add in the broth container, diced chicken, and bring to a boil. Simmer for 5 minutes and then add the gnocchi. Simmer for 5 more minutes and add in the half and half and spinach. Stir. Add salt and pepper, if needed. Serve.
