Fiesta Chicken Corn Chowder

Dice potato into small bite-size pieces and cut corn kernels from the cobs. Heat 2 T. of oil and 2 T. of butter in a large soup pot over medium-high heat. Add chicken, onion/pepper mixture, and seasonings; sauté for 4–5 minutes. Remove chicken and small dice at this time. Sprinkle in ¼ C. of flour (or GF substitute) Stir into the onion/peppers in the pot for 1 min. Add in diced chicken. Add broth, diced potato, creamed corn mixture, and fresh corn. Stir well. Bring to a boil, then reduce heat and simmer uncovered for 15–20 minutes, or until potato is tender and chicken reaches 165°F. Reduce heat to low and stir in cream cheese until melted. Add shredded cheese a little at a time, stirring until completely melted and chowder is creamy. Serve hot.
