Ginger Lime Pork with Coconut Rice **PREP-Marinade**
Place marinade in with the pork for at least 20 minutes up to 24 hours. It will be more flavorful the longer you marinate! Add the rice to a pot and add in coconut milk and 1 cup of water and a pinch of salt. Bring to a boil, reduce heat to low, cover, and simmer for 15 minutes. Remove from heat and let sit covered for 10 minutes. Fluff with a fork. Meanwhile, pat dry the pork chops. Add a little oil to a skillet on medium- high heat. Cook the pork chops 4-5 minutes per side, until internal temp. Is 145. Remove to a plate for 5 minutes. Slice pork, place on top of rice, sprinkle with cilantro and lime juice. Serve with sliced cucumbers.
