Greek Chicken Orzo Power Bowls

Bring a pot of water to a boil. Cook the orzo for 8-9 min. Drain. Wash and dice Romaine. Slice the tomatoes and dice the cucumber, place in a bowl and add a big spoon of the sauce. Stir. You can also add a squeeze of lemon juice if you have some. Salt and pepper to taste, if needed. Sprinkle the spices over the chicken pieces. In a large skillet add 1 T. of oil on medium high heat. Fry the chicken for 5-7 min. On each side until done. Let rest, and chop in small, diced pieces. You can also broil on top rack for 5-7 minutes per side, depending on thickness.  Place Romaine, then orzo in a bowl. Top with chicken, tomato/cucumber mix, Tzatziki sauce and sprinkle with feta cheese.
