3 Italian Mozzarella Chicken Foil Packets
Preheat oven to 400 degrees. Mix marinade, add 3 T. of marinade to chicken bag and squish it around until coated. You can marinade out of the refrigerator for 30 minutes, or in the refrigerator no longer than 24 hours. Wash and dice potatoes, place in a microwave safe bowl. Add 1 T. of water, cover, and microwave for 5 minutes. If you would like a more tender carrot you can add the carrots to the bowl to microwave also. Add the remaining veggies to the potato bowl and toss with the remaining marinade. Lay out 4, 18x12 pieces of Heavy-Duty Aluminum Foil (or double up regular foil). Spray with cooking oil, lay out 1 piece of chicken to the center of the foil and divide the veggies into 4 and place around the chicken. Dot evenly each foil packet with 1 T. each of small cubed butter. Seal foiled packets closed and place on a baking sheet. Bake for 20-25 minutes and the chicken is done (165 internal) Open the foil and salt and pepper if needed, top with cheese. Broil for a minute until cheese is melted.
