Lemon Chicken Piccata
Bring a pot of water to a boil and cook noodles for 3-5 minutes and tender. Drain. Toss with olive oil. Put ½ C. of flour or GF flour into a shallow dish. Dredge the chicken pieces in the flour. In a large skillet on med. High heat add 2 T. of butter and 2 T. of oil. Cook the chicken for 3-5 min. on each side until cooked through. When done, remove to a plate. Turn the heat to medium low. Add the liquid container. Wash and slice half of your lemon into really thin slices. Juice the other half of the lemon into the sauce. Cook for 3-4 min. Sprinkle in parsley. Serve the sauce over chicken and a bed of pasta. Steam your carrots. (I like to cook them in a little butter and seasonings – or brown sugar
