Lemon Parmesan Chicken

Place ½ C. of flour in a shallow bowl, beat an egg in another shallow bowl, in the third bowl add the panko bag and the grated Parmesan cheese and stir well.  Dip the chicken into the flour, egg, then Panko mix. Press crumbs into chicken pieces.  Place on a plate.  In a large skillet on medium high heat add 2 Tbl. Of butter or olive oil.  Place the chicken flat in the pan and cook for 3-4 min. on each side until done.  Remove.  Top each piece of chicken with a little mozzarella in the middle of the chicken breast.  Broil until melted.  Drizzle lemon over chicken and serve.  Steam or roast veggies.  Bring a pot of water to a boil and cook pasta for 3-5 minutes until done. Rinse. Top with butter, salt, and pepper.
