 Loaded Keto Chicken Cauliflower Rice Casserole

Preheat the oven to 350 degrees. Let cream cheese come to room temperature or microwave until soft.  Fill a small pot with water and bring to a boil.  Cook chicken for 15-20 minutes on medium low until done.  Remove and shred in a Bosch, KitchenAid, or Hand Mixer.  Leave a small crack in the Ziploc bag of the cauliflower and microwave for 3-4 minutes until tender.  Reserve a handful of cheese to sprinkle on top of the casserole.  Mix all ingredients together in a bowl. Place in a greased casserole dish. Top with a handful of cheese.  Bake uncovered for 15 minutes. I use an 8x8 dish for a serving size of 4.
