Mediterranean Chicken Orzo **Marinade**

In a small bowl add ¼ C. of olive oil, the spices, the zest of your lemon and juice of half your lemon. Mix. Pour into the chicken and squish around. Marinade for 30 minutes. Grill your chicken pieces, or broil on a foiled lined baking sheet on high for 6-7 minutes per side. Or cook in a skillet on medium heat for 5-6 minutes per side until done. Set aside. Cut tomatoes in half. In a skillet add 1 T. of olive oil on medium heat. Add tomatoes and broth. Cook until tomatoes are soft, 5-8 minutes. Meanwhile, boil water in a small pot and cook orzo for 9 minutes. Drain. Once the tomatoes are cooked mix in the orzo, spinach bag, drained olives, and top with chicken. Drizzle with the other half of lemon juice and sprinkle with Feta.
