Pork and Green Bean Stir- Fry
Wash and trim ends off the green beans and chop into 1” pieces. Meanwhile, boil a pot of water. When beans are ready, blanch for about 5 minutes. Drain. To Char beans: In a heavy bottomed skillet, like cast iron if you have it, add 2 T. of oil on high heat. Add the beans in one layer (be careful if they are still wet so it doesn’t pop on you with oil) Let cook for 1-minute, quick stir, let cook for 30 seconds. Quick stir and let cook for another 30. Do this for 2 ½ minutes. The beans should be charred but tender crisp. Remove to a bowl. Turn heat to medium and add the onions, Sauté for 1-2 minutes. Add the pork and stir fry 3-4 minutes until done. Add the beans back in and the sauce. Stir until all is coated. Serve over steamed rice. (Open the bag slightly and microwave for 2 minutes)
