Cranberry Salsa and Rice Stuffing

In a skillet on medium heat add the veggies and 4 T. of butter.  Sauté the veggies for 4-5 min.  Steam the rice for 1-2 min then add to the veggies, drain olives, then stir well. You can use the dressing to stuff the turkey, you can also add about 1 C. of broth to the dressing, stir well, and place in a baking dish and heat it in the oven for about 20 minutes on 350 degrees. Or just serve as a side dish.  The fresh cranberry salsa can be served with the turkey dinner, you can use it over cream cheese on a cracker board, you can use it on eggs, or anything you would put salsa on.
