Sesame Feta Chicken and Sweet Potatoes
Preheat oven to 425. Peel and cut sweet potato into sticks. Toss with 2 T. of olive oil and season with salt and pepper. Place on a baking sheet and bake for 10 minutes. In a bowl, toss the chicken with 2 T. of olive oil and the spices. Nestle the chicken on the sheet around the potatoes. Bake for 25-30 minutes, until the chicken is cooked through. Spread the spinach on each plate. Top with the hot chicken and potatoes to wilt the spinach. Drizzle with dressing. Top with feta.
