Sesame Feta Chicken and Sweet Potatoes
Preheat oven to 425. Peel and cut sweet potato into sticks. Toss with 2 T. of olive oil and season with salt and pepper. Place on a baking sheet and bake for 10 minutes. In a bowl, toss the chicken with 2 T. of olive oil and the spices. Nestle the chicken on the sheet around the potatoes. Bake for 25-30 minutes, until the chicken is cooked through. Spread the spinach on each plate. Top with the hot chicken and potatoes to wilt the spinach. Drizzle with dressing. Top with feta and sliced avocadoes.
