Skinny Chicken Cordon Bleu
Optional: place panko on a baking sheet, spray with oil and broil on middle rack for a few minutes until browned. Watch carefully and do not burn ;). In a shallow bowl mix an egg with 1 T. of flour. In another shallow bowl add the browned panko. Fold the cheese inside of the ham, stuff inside the chicken. (add toothpicks, if necessary, to keep it closed) Roll the chicken in beaten egg, then panko. Place on a greased baking dish. Bake at 375 for 25-30 min. Until done. For sauce: Add 1 T. of butter to a pot on medium heat, melt. Whisk in 1 T. of flour. Mix in the sauce container. Continue to whisk for a few min until thickened. Add the Parmesan cheese. Stir until melted on low heat. Pour over the chicken. You can toss your carrots in melted butter or olive oil, sprinkle with brown sugar, a little salt and pepper and roast for 25 minutes at 400 degrees on a parchment lined baking sheet.
