Southwest Sweet Potato Skillet
Peel and dice the sweet potato. The smaller the cubes, the quicker it will cook. Heat 1 tsp. of olive oil in a large skillet on medium high heat. Add the ground beef, onion, and the amount of jalapenos you would like. Break apart and add the small cup of spices. When ground beef is done, remove to a plate. Add the sweet potatoes, diced tomatoes, ¼ C. water, stir well, add cover with a lid and cook on low for about 20 minutes until potatoes are tender. Add the ground beef back in, stir. Top with diced avocado and drizzle with cream sauce.
