Swedish Meatballs

Cook potatoes to your preference while you are cooking the meatballs.  In a large skillet on medium heat, add some olive oil.  Shape your meatballs into about 1” balls (I use a cookie scoop if you have one) cooked until browned on all sides.  Let them brown on each side before flipping so they don’t break apart.  Transfer to a plate and cover with foil.  Add 4 Tablespoons of butter and 3 Tablespoons of flour to the same skillet.  Whisk until it turns light brown, whisk in the liquids and let it come to a boil.  Salt and pepper to taste. Add the meatballs back in.  Serve with roasted or mashed potatoes.  Steam carrots or eat raw.
