Thai Noodle Chicken Salad

Bring a pot of water to a boil.  Dip the noodles into the boiling water for 15-30 seconds.  Drain. Chill. Place chicken on a foil lined baking sheet.  Broil on high heat, top rack, for 5-7 minutes per side.  Remove.  Let rest for 5 minutes, slice.  Meanwhile, wash and small dice Romaine. Wash and cut cucumbers into thin circles.  For salad, layer noodles, lettuce, carrots, peppers, snap peas, mangos.  Top with chicken and nuts.  Drizzle with dressing.
