Rinse quinoa in a fine mesh strainer and let sit. Drain and rinse beans. In a large skillet on medium high heat add 1 T. of oil and cook onions for about 2 minutes. Add the ground turkey, crumble as it cooks. Sprinkle spices over turkey as you crumble. Add the tomatoes, black beans, corn, and quinoa. Stir until combined. When the mixture starts to boil ADD in ½ C. of water. Stir. Cover with a lid and lower heat to low for 20 minutes until quinoa is tender. Sprinkle on cheese and cover for a minute until melted. Serve in warm tortillas or in a bowl!
