Zesty Cajun Lemon Chicken Alfredo
Bring a pot of salted water to a boil and cook pasta for 6-8 minutes until al dente. Drain, rinse. In a bowl toss together the chicken, 1 T. of olive oil, the seasonings, and 2 T. of the parmesan cheese. Melt 2 T. of butter in a large skillet on medium high heat. Sear the chicken on both sides for 5 minutes until golden brown and done at 165 degrees. Cut lemon in half and squeeze fresh lemon juice over the chicken. Set aside, slice. In the same skillet on medium heat add in the broth mixture, let simmer for 3-4 minutes. Whisk in the parmesan cheese and then toss in the pasta. Remove from heat and stir in the parsley. Top with sliced chicken. Steam or roast carrots with butter and your favorite seasonings.
