Be My Valentine Meatloaf

It’s Valentine’s week and we do a fun family dinner that we call “red dinner”. Everything is pink, white, or red - even the gravy and milk. Ha ha.  My favorite meatloaf recipe-90% lean ground beef,  carrots, onions, Saltines, and seasonings, topped with a sweetened ketchup sauce.  I do cook mine in a heart shaped pan, but it will fit in a 1 lb loaf pan.  Served with cauliflower on the side and potatoes. We mash our potatoes with a small portion of canned beets to turn them pink.
