Fresh Cranberry Salsa and Rice Stuffing

This recipe is a family tradition from my mother. We have always had rice stuffing for our Thanksgiving dinners alongside the bread stuffing. It is a blend of thyme, oregano, and rosemary mixed with onions, carrots, celery and olives sauteed in butter. Tossed in with Jasmine rice. (serves 8) Complementing this dish is fresh cranberry salsa, a zesty medley of fresh cranberries, red onions, jalapeno, lime, and cilantro. Serve as a side, over cheese, with chips. The vibrant colors and bold flavors dance on your palate, adding a burst of freshness to your meal. Treat your Thanksgiving guests to these delightful dishes! GF
