Thai Noodle Stir Fry

I first had this dish at Noodle and Company many years ago and it sounded so good this week. A chicken stir fry with red peppers, julienned carrots, broccoli, and zucchini tossed with a sweet and a touch of spice coconut based sauce, yellow curry, and a dash of sweet chili sauce. Served with rice noodles, topped with green onions, sesame seeds and a sprinkle of lime juice. GF

My 15 & 12 year old made this, and it turned out PERFECT! Everyone in the family loved it! I appreciated the variety of veggies thrown in!

One of my favorite meals! Chicken, spinach, romaine lettuce, pasta, nuts and a yummy dressing/marinade. Simple to assemble but seems time consuming. And to top it off…….its a good for you meal! Can’t go wrong with this choice!
